Vegan Lasagna with Roasted Cauliflower "Ricotta"

This recipe was pretty darn good. I'm usually against vegan lasagnas because they can be just fancy pastas. You take out the cheese in lasagna and you pretty much just have spaghetti, but this was different because of the roasted cauliflower and tofu mash. 




Mashing up the tofu, nutritional yeast and a few spices.


Jazzing up tomato sauce with some spices and garlic.



Mashing in the roasted cauliflower into the tofu mash.


Layering up sauce, then lasagna noodles, then mash, then spinach, then do it at all over again! I layered up the very top with breadcrumbs. 


It was enough food for about 4 or 5 lunches and overall pretty yummy!
