Veggies burgers, always a vegan staple! I made these bad boys the other night from Appetite for Reduction by Isa Chandra Moskowitz (everyone's favoirte vegan homegirl..or maybe just mine?) along with some OMG Oven Baked Onion Rings. They're lentil burgers full of all kinds of yummy things like zucchini with a spicy kick of chipotle peppers.
Sauteing up some onions, zucchini, garlic, and cilantro!
Processing it all together with some soy sauce, vinegar, the lentils, and a generous serving of breadcrumbs before forming them into patties for a quick go on the skillet again.

The best part about the baked onion rings is they've still got a nice crunch to them without all the fattening batter of "real" onion rings. They're plunged into a batter of almond milk, vinegar, and flour, and then dipped in bread crumbs and corn starch. **Note: these do not keep. After about an hour of sitting around they get soggy and gross so **if you're checking out Appetite for Reduction** only chop enough onion as you're actually going eat.
I served "burgers" with lettuce, tomato, and vegenaise. Oh, and my onion rings of course!
I chopped them longways to fit a hoagie style roll rather than traditional hamburger bun.
I'm only a couple recipes into Appetite for Reduction, but I am loving it!
