After having a bunch of leftover kale from making udon soup, I decided to use the rest to make baked kale chips! yum!
Kale chips are super simple to make and the perfect solution to leftover greens. First preheat your oven to 300 degrees Fahrenheit.
After washing your kale, simply trim the leaves away from the thick stem and chop into medium size pieces.
Drizzle with olive oil and sprinkle with salt and then lightly mix to make sure all your leaves are coated.
Spread across a cookie sheet and place in the oven for 20 minutes.
Then voila! A light, crisp, healthier alternative to potato chips. I ate them by themselves as a snack, but they would be a great side to soup or sandwiches as well.
